My fruit is soaking in Evan Williams right now--I don't like fruitcake, but my husband and son-in-law do. We freeze some of the finished loaves, and they enjoy them all year. My recipe is loosely based on the one in Jeff Smith's (the Frugal Gourmet) Christmas cookbook.
