Just because someone lives in Florida, doesn't mean they don't get cold. People get acclimated to whereever they live. And many homes in Florida don't have the insulation that homes further north have. I remember being very cold in the winters in FL (also very hot in the summers). You can use the lighter weight polyester batting (low loft), if you want it to be less warm, or a cotton batting. I wouldn't use wool batting (because of allergies more than the warmth).
