I never iron my bindings. I just hold the two raw edges together as I stitch. Since I've already stitched once around the quilt to stabilize and hold those edges together it isn't hard to line up the binding edges. I like the softer fold when hand sewing the binding to the back of the quilt. It is easier to get a nearly invisible stitch that way.
