This recipe came from one of the Fix-It and Forget-It cookbooks.
No Fat Apple Cake
1 C. Flour
1 C. Sugar
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
4 med. sized cooking apples, chopped
2 eggs beaten
2 tsp. vanilla
Combine flour, sugar, baking powder, cinnamon, and salt.
Add apples, stirring lightly to coat.
Combine eggs and vanilla. Add to apple mixture.
Stir just until moistened. Spoon into lightly greased slow cooker.
Cover, bake on high 2 1/2-3 hours.
Seve warm. Top with ice cream or whipped topping.
Variation: stir in 1/2 cup broken walnuts or raisins with apples.
The first time I made this I had an extra apple so i added that too. It was sooo yummy!
