Well, I just looked through several pieces in my stash and had a very hard time finding the name on the selvedges but did see P & B and Kona Bay. They are sorted by 'whiteness' - like you said, yellowy, creamy, really white etc and within each stack there is a lot of variation. When it's time to pick one it can take a while
But that's a big part of the fun for me.
