Refried Bean Soup A family favorite and ready in just minutes! Low fat, vegetarian and high in fiber!
1 can refried beans
chicken broth
corn (frozen or canned)
beans (drained and rinsed) I usually use 2 cans kidney and pinto
diced tomatoes, rotel or salsa
Heat refried beans in pan. Add some broth to thin it. Add corn, drained beans, tomatoes/salsa. Add more broth for good soup consistency. On the side I have grated cheese, crunched tortilla chips, onion, avocado, jalapeņos, sour cream, etc.
