I would think that you could go from a tan to a burgundy with shades of green in between. You have to realize that Bargello require lights to darks. I had done a burgundy Bargello but can't find a picture. Keep in mine if you don't mind having a little pink or mauve in the quilt because that is the lighter side of Burgundy you will be OK. Best thing to do is what Dina and I do. Start laying out strips of fabric and tweak the fabrics until what you see is pleasing to the eye. This was work in progress for my Aurora Borealis which has been finished. Good Luck !!
