I know what you mean about big sweet potatoes. My DH does not like them and it is hard to find a little one just for me. So, I always bake me a big one - cut in half and eat one half and put the other in the refrigerator in a zipper bag and reheat it up in the microwave for another meal and it tastes just as good as if I just cooked it.
