Nice progress!! Make sure you reward yourself with some sewing time.
I tamed my scraps also. Took me several months. I cut mine, 5 1/2, 3 1/2, and 2 1/2. Anything bigger, I leave alone. Unless I'm sure I won't go back to it. Then it just gets cut into the largest size first. I rarely buy more then a fat quarter or 1/4 yard of fabric. I LIKE to scrap quilt.
I think it's smart to cut into the largest size first. (10") You can always cut it down. I would say, you can't put it back together. But, I've been know to sew it back if I need a larger piece. My mom always said, you really don't notice it after it's been quilted. Especially in a scrappy. So do what's best for you.
