I just discovered Collard Greens and so I made them with sauted garlic, and white beans with a little sweet red pepper over tiny penne'.

So easy, one pan supper.

I use a soup pot and cook the pasta first and dump into colander.

In the same pot add some olive oil and toss in some chopped garlic and sweet red pepper and any amount of rough chopped collard greens you want and a little salt and let it sweat down a little. Cut out the big veins in the leaves before you chop them.

When the greens are almost cooked to your liking add the (canned) rinsed white beans.

Cook until beans are hot. Taste and add salt & pepper and some ground nutmeg, just a little and taste again and again until you like the flavor.

Dump the pasta back into the pot and stir. Re-season to your liking.
