If your collection of Christmas fabrics has a relatively equal mix of lights and medium/darks, you might want to look at scrappy quilt patterns. "I Can't Believe It's a Beginner" from The Pattern Basket by Margot Languedoc makes up beautifully (and easily) and you could use twenty or more fabrics in it with great results, I'm sure.
