World Organization of Organic farmers: WOOF. There is a program where folks volunteer to work on the farms in exchange for room and board. The farmer gets relatively free labor, the worker gets to learn new skills and stay in an area long enough to explore it. a great plan if the farmer really does teach a new trade and the volunteer is a hard worker.
My daughter is a flute player and a potter, so this trip is right up her alley. She was raised in an environment of focusing on what needs are versus what wants are so she has a great work ethic, and she is good with new experiences that involve work and meeting needs. I know she'll have a great time, I'm just hoping that I can help her find affordable places to stay in Shannon and London, since she is financing this mostly on her own.
