Quilting with contrasting thread does seem to show up better on fabrics that are solid or read as a solid. Lay your thread on the fabric you are thinking about using, maybe even do a small basting stitch. Do you like it? That will help you make the decision.

I used a light tan thread on a quilt with a black backing. The quilt back was stunning even with my poor efforts at following a panto. Everyone loves the back more than the front.

Edited to add: I really like your pattern. It's simple yet very attractive. I'm not a fan that loves a whole lot of little bitty pieces that have to be sewn together. I like the bigger blocks that show the fabric off.
