Yes, minky works for the inner part. I wouldn't use it for the outer part. I've made the one with squares (Brick Work or Windows) and the one with octagons (Denim Stars) on this page,

And I've got a flannel and minky one cut out for the Denim Stars. If it gets squirley on you, you can use a glue stick or textile spray adhesive. It also helps a TON if you use a walking foot.
