I tripped into a better way (by accident, mind you... lol) ... I use Pellon SF101 Shape Flex as the foundation for doing edges. You can iron down several rows of the "shingles" and then go sew a bunch down at a time. No pinning.

The first time I did this (I said it was an accident! lol) , I grabbed that interfacing just because I was trying to keep the thickness down (so the side seams of one of my bags would be doable with the selvedges) and it was the lightest-weight-anything I had on hand at the time.

I buy that interfacing by the bolt at Joann's when I have a 40-50% off coupon.
