The last time I was at JoAnn's, they had a sign on each bin of batting stating thickness. Might be a good place to start!
Hobbs Thermore batting is a very thin polyester -- I think 1/4". Can be quilted up to 8" apart.
Quilter's Dream has a very thin needlepunched cotton batting -- "Request" weight is their thinnest.
