here is another version, I made this version when I found out that I had cancer. Everything in it helps to build the immune system.

Cook the barley according to the package directions.

Once it's done it can be added to the other ingredients and eaten warm but can also be left to cool before adding them together, it's a matter of choice.

In a food processor or a food chopper (which I use) chop up the following, not together but separately because they each chop up at different consistencies. You want them to look like little bit of the whole food not mushy:

about a cup of broccoli
about a cup of cauliflower
2 carrots
1 med onion (I chop the onion real fine almost to the point of being liquified, it's just the way like it)

Remove all the seeds from the following and then hand cut these as they don't do well in a chopper.

1 zucchini squash
1 yellow squash
a couple of Roma tomatoes (I use Roma's because they have more meat to them)

You can add or subtract anything here you don't like, and sometimes when I can't get one, I will use another. Like cucumbers in place of the zucchini. Again it's a matter of what veggies you like.

I then add spices to taste such as garlic (not garlic salt), fresh chopped basil, fresh dill, a little sea salt, fresh chopped rosemary.

The only dressing I use is either lemon juice or lime juice. It stores much better without anything else.

I do it this way all the time and when I have guest over they can add what ever dressing they like, if they want something different. You could use what ever dressing you want. Balsamic dressing is good, my son likes that, my daughter likes it with Ranch dressing with bacon bits added. SO it's a matter of taste to what you can use.

Barley salad is great hot or cold!
