Sounds like me yesterday - I wanted to make pinwheels so I placed two charms together, sewed around the outside, and down the middle diagonally a couple of times. When I cut them apart I had closed pockets sewn around all three sides. Spent the next hour unsewing. At least you have HST's - just Google image HST quilts and you'll get a bunch of ideas.
