I used to always put fresh corn into the freezer during season. Just lower the corn into simmering water for about 2 minutes and when it is cool enough to handle cut it off the cob. Put into pint baggies and freeze for those long winter nights and corn chowder or taco soup.
Diverticulitis prevents me form enjoying corn anymore. But, I used to love it frozen and ready to reheat for a meal.
I still make Chow chow for friends and family though. They would be very disappointed if I didn't.
