When I cut them off, I sew the extra seam to make half square triangles. I made little pinwheel blocks and used them for cornerstones when sashing my quilt. They looked awesome. Have also made flying geese from them, doll quilts, placemats, potholders. They can also be used as components for other blocks. There are tons of uses for them.
