I don't use broccoli or mushrooms. I use carrots, tomatoes, water chestnuts, little onion, peas, potatos and that's about it. I have used pasta and noodles. Everything has been pretty much leftovers. Whatever works for you. have used rice also. I make my own crust. I use foil pans and put my bottom crust in then put into the oven for a bit. Then add ingredients, top crust back in oven. I usually make 3-4 if enough left over. Usually have been able to flip upside down into micro safe bowl so Dh can take to work to reheat.
