Marcycn, yes I would put the peace sign fabric in the centers of the rectangles. I did one of this same pattern for a charity quilt with solid black centers and it looked great. If you decide to do that pattern, every piece is the same size, 6 1/2" x 2 1/2" so it is super easy!
