Okay if you're willing to go to Portland, you will hit the jackpot. A lot of Seattleites do road trips to Portland to hit the quilt stores - they actually hire a bus. And since you have to go through Vancouver to get to Portland from Seattle, I'll include the shops there also.

Portland:
Fabric Depot (plan at least 3 hours for this one)
Pine Needle
Hollyhill Quilt Shoppe
A Common Thread
Cool Cottons
Sharon's Attic
Boersma's

In Vancouver:
Craft Warehouse (a small regional crafting chain similar to Joann's but they have GREAT name-brand quilting fabrics)
Fiddlesticks Quilt shop
Country Manor
Momma Made It (Longview, north of Vancouver. This shop specializes in civil war repros.)

eta: Craft Warehouse also has a store in Gresham, just outside of Portland
