I'd probably just use your "grunge" fabric and let your blocks shine. They're the stars of the show, uhm, quilt!
Are you planning to use sashing inbetween the block once they're square? There you might want to use a different colour, maybe a darker tan or brown. But I would keep it soft and fairly neutral.
Your blocks look great BTW, even without an additional press!
