Canned Okra
1 gallon sliced okra
1/2 cup vinegar
1/4 cup canning salt
water to cover okra
Boil for 1 minute or until okra changes color.
Place into hot jars and seal.
When ready to cook, drain and rinse in cold water. Drain until all the liquid is gone. Batter and fry. {DO NOT ADD ANY MORE SALT}.
Very good. Just handle with care because okra is very tender and fall apart.
I'm trying this today. I've never canned okra before, but I have some in the frig now I can use this way. Thanks for the recipe.
