Several weeks ago my grandson accidently put a 5 lb bag of potatoes into the freezer when carrying in the groceries. About three weeks later we "tried" to see if they would still be usable. To our surprise we were able to boil them and make mashed potatoes without any problems. I don't know what else you could use them for but I can vouch for the mashed potatoes. Take a few and freeze them then experiment.
