I love this fabric too, and like you, didn't want to cut it up too small.
I went BIG...I made a king-size quilt top out of 12" squares of this fabric. It's just a top so far but I LOVE it and can't wait to finish up my Christmas projects so I can get it quilted and on the bed.
Sometimes simple is best, I am really enjoying simple big block quilts lately.
