Honey, you have beat me BIG TIME. My suggestion is just keep nibbling away at them. When they start to annoy you, put the bag away and move on to something else for a while.
For a quick quilt. Just make four or 16 patch squares, add sashing and turn these into donations quilts of any size you want. So many organizations love our donations and girl, you could bless so many with your 2.5 inch stash. !!
