Here's a yummy one:
Banana Nut Bread
1 cup all-purpose flour
1 cup whole wheat pastry flour
1 cup packed brown sugar
1 Tbsp. baking powder
1 tsp. cinnamon
1/4 tsp. baking soda
4 egg whites
1/2 cup buttermilk
1/3 cup unsweetened applesauce
1 tsp. vanilla
1 cup mashed ripe bananas (about 2 med.)
1/2 cup chopped walnuts
Preheat oven to 350*. Spray a 9" x 5" loaf pan with no-stick spray, and set aside.
In a lg. bowl, stir together the all-purpose flour, whole wheat flour, brown sugar, baking powder, cinnamon and baking soda. Make a well in center of the mixture.
In another lg. bowl, beat the egg whites until foamy. Stir in buttermilk, applesauce and vanilla. Stir in the bananas until well combined.
Add banana mixture to flour mixture, stir just until moistened. Fold in walnuts.
Pour batter into prepared pan. Bake for 55 minutes, or until toothpick in center comes out clean. Cool bread in the pan for 10 min. Then remove bread and cool on wire rack before slicing.
