I suspect you could use jelly rolls as long as the pieces are small enough to fit on the roll width. I don't think there will be any particular advantage to using them and I could see how it might be a little inconvenient to try to trace the template onto the jelly roll. I think I would hesitate because Jelly Rolls are so expensive, I personally would want to use them for strip piecing rather than cut them up for applique. However, I see no reason why they wouldn't work if that it what you want to use.
