My Irish Grandmother, long deceased, used to make cookies like these. I don't remember that they had a special name but we were rally excited as children when she started the process. We all knew we were going to have a special treat, her good cookies with a little pocket of an extra surprise. I'm going to give these a try to see if they taste like Gram's special cookies.
