Here is one of our family favorites:

5 cups frozen mixed vegetables ( corn, green beans, limas, peas, not broccoli and cauliflower kind)
1 cup chopped celery
1 medium onion, chopped
1 cup grated cheddar
1 cup mayonnaise (I use light mayo)
1/2 cup butter
34 Ritz crackers, crushed

Cook onion, celery and vegetables until just tender and drain very well. Place into 9x13 greased casserole dish.
Mix cheese and mayo and spread over vegetables. Combine crackers and butter and spread on top. Bake 30 minutes at 350.

To make ahead cook vegetables up to 2 days before, mix cheese and mayo and put into a container, crackers and butter go into a zip lok bag ( I mix mine in the bag). I layer it just before I cook it. Enjoy!
