My mom used to make a date cookie that was like a sandwich. Cookie dough, date mixture and more dough then bake. I found this to taste the same and be much easier.

Date Bars

Date Filling: 8 oz box of chopped dates, 1/2 C water, 1 Tbl. lemon juice, 1 Tbl.butter
Cook dates, sugar & water together until thick, stirring frequently. Blend in lemon juice and butter. Cool

Cookie Dough: 1 box Butter Pecan Cake Mix, 1/2 C butter-softened, 1 egg
Preheat oven to 350. Stir dry cake mix, butter & egg in lrg. bowl. Press 1/2 mixture(I use a little more than 1/2) into ungreased 9x13 pan. Bake 10 min. Pour date mixture over crust. Sprinkle with remaining cake mix mixture. Bake 20-25 min. or until light golden brown. Cool completely, about 1 hour before cutting.

I had to take these away from our pastor.lol Dates seem to comes in a lot of different sizes. I have used any size in this recipe. A couple oz doesn't seem to make a difference. Hope you enjoy these as much as I do.
