This is one of my FAVORITE cookies.
CRUNCHY DATE ROUNDS
1/2 cup butter
1/2 cup sugar
1/4 cup brown sugar
1 egg
1 tsp. vanilla
1 cup flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/2 cup chopped walnuts
1 cup snipped pitted dates
1 1/2 cup sugar cereal flakes coarsely crushed (Frosted Flakes) which equals 1/2 cup crushed (I use more)
Combine butter, sugars, egg, and vanilla. Beat well. Sift together flour, baking powder, soda and salt. Gradually add to creamed mixture, blending well.
Stir in nuts and dates. Drop from tsp into cereal flakes, rolling to coat well.
Bake 2" apart on ungreased cookie sheet at 375 degrees for 10-12 min. or until top springs back when lightly touched.
