I've done a single, double and triple Irish Chain quilts, and they lend themselves beautifully with strip piecing and are not difficult. The only "difficult" part is keeping the strip sets in the correct order, which can be easily done with a small paste up block to keep you on track. The double Irish Chain is an easy quilt to make.
