Another way to reduce the fat with a meatloaf is to cook in the crockpot.

I make my meatloaf the same as usual, and shape it to fit in the crockpot.
Sometimes I make several in advance, and freeze, already shaped.
Place an upside down bowl/dish into the crock, that is big enough for the meatloaf to sit on top.
If it has been frozen, I let it thaw overnight in the frig.
Then set to cook .... and go and sew!

Since I started this, I rarely do meatloaf any other way, as it soon became my favourite!
