This is a date recipe that my family enjoys. It has always been moist and chewy for me. If you try it, hope you enjoy!
Chinese Chews
1 pound box brown sugar, light or dark
3 eggs (I've never used egg substitute)
1 teaspoon vanilla
1 stick butter ( may substitute margarine) melted and cooled
2 cups plain flour
2 teaspoons baking powder
1 cup chopped pecans
1 box chopped dates
Beat eggs, add brown sugar, vanilla, and melted buter. Then add a little at a time the flour, baking powder, dates, and pecans. Grease and flour a 9 x 13-inch pan. Spread batter in pan. Bake 30-40 minutes at 350 degrees. Check center, and if not done, cook longer, Let cool; but into squares. Makes about 30 squares, depending on size square.
