Here is a baked oatmeal recipe that is great and freezes well. I usually cut it in half when I make it. My grandchildren love it
Baked Oatmeal Makes 2 9x13 pans
Ingredients:
8 cups of Oats Topping: 1 tsp. cinnamon (add to your liking)
4 cups of Quick Oatmeal ½ brown sugar (add to your liking
8 eggs beaten (Split between two pans)
2 cups brown sugar
2 cups white sugar
2 Tablespoons Baking Powder
2 cups oil
4 cups milk
4 tsp. vanilla extract
Pinch of salt
Directions:
1. Use BIG bowl: mix eggs, sugar, and oil together (liquids)
2. Add milk and vanilla
3. Fold in dry ingredients
4. Pour into both greased pans
5. Sprinkle top with brown sugar and cinnamon
Bake at 350 for 35-55 minutes
Toothpick should be a bit wet when done.
