I have seen this before and made a comment on the page about the waste of fabric. Someone commented on my comment that there is always a waste of fabric when quilting and the waste could be used in other projects. Without trimming the excess fabric from the backside of the block there is no waste to use in another project. Seems to me there would also be a lot of bulk in some of the designs of the block, also. I think the only trade off is the time involved in not cutting the fabric before sewing to create each block.
Willferd, the first block of the demo should be 9" unfinished. You will lose 1" each direction that the folds take up in stiching the raw edges on added fabric to create the design.
I haven't tried to make any of the blocks, but I, too, would think that the points would be cut off since she doesn't allow for the 1/4" seaming the blocks together. You could always allow for that when placing the added fabric to the 10" square.
