I buy large quantities of chicken when it's on sale, season it up and pressure cook it. After cooking, I take the meat from the bones, shred or chunk it and vacuum seal meal sized portions for freezing. This way, I always chicken ready for enchiladas, casseroles or one pot meals on the stove top. Also make delicious soup out of the broth that's left in the pressure cooker. The flavor is so concentrated and wonderful! I do refrigerate the broth for a day so that I can skim off most of the fat.
