For Summer:
-Tuna salad with crackers or served in a tomato cup;
-A scoop of chicken salad served on a simple romaine, cuke, crouton salad with a light homemade white balsamic vinaigrette (like the one made by Potbelly's);
-Pasta salad with lots of veggies and either chicken or shrimp; Pasta tuna salad with baby peas;
-Maurice, Greek, Taco, Cantonese or Cobb salad;
-Egg salad sandwich (on occasion a fried bologna on toast sandwich) :-)
-Any leftover in the fridge.
In the Winter, soup is my go to. I have lots of different soup recipes so never get bored with the same one over & over.
I'm lucky - DH will eat any meal I put in front of him.
Some good suggestions here already. I'll be following this post to get some more fresh ideas.
