I've made plenty of pieced pillow cases -- but I do layer them with either very light batting or flannel and do free motion quilting.
Seam lines on the face aren't an issue for people who sleep on their back. Or if you want to avoid that possibility, you could make it be one of those long body pillows intended to lie against your back, not your face.
