I love using fleece for both backing and/or batting. For couch throws I cheat and just use the single layer of fleece with the pieced top. My family and friends love 'em.
The only caution I would add is if you need to piece the fleece make sure you don't have one horizontal and one vertical as fleece often has more give WOF than longways.
