I think a cake with baked edges should be fine. Muffins stay moist inside without a coating on the sides. The only way it would dry out is if the 3 tiers where cut out of a larger cake. I would make sure to grease my pans well, use parchment paper on the bottom so they come out nice. if you want to glaze the edges you had better check with the customer.
