My friend sewed one of these and used a lighter interfacing. It still turned out great.
I didn't use interfacing or Peltex/Timtex. I started with some cotton duck fabric as a base (like a lighter canvas) and then used cotton batting and the outer home dec fabric by Amy Butler. With all the quilting lines, it made the pieces just as stiff as Peltex would have, or stiffer.
