It is not the kind of pattern that blocks can be removed from as it is only 9 large blocks and they are all part of the design. Any help would be greatly appreciated.

Personally, I would just make it 2x2 blocks. That would give you a 56" square quilt. And since there is no path through the labyrinth anyway, you don't lose anything (in my opinion) by making it smaller.
