Honestly something as easy as 10 inch squares can quilt up quickly if you find an awesome fabric collection. I did one that was more of 10x14 rectangles and it is one of my favorite couch quilts.
But partially it will depend on your DDs likes and dislikes and honestly what you like making.
I am sooo happy to read this! I am making my 7 year old grandson a quilt using fabric with lots of transportation prints. I plan on using 10 1/2 squares alternating with blocks made from 4 1/2 sq & 2 1/2 sashing. I was worried that the 10 1/2 squares would be too large but he will want to see his trucks & planes not Grandma's piecing, KWIM? There is plenty of piecing with sashing & cornerstones but those big squares...well, that's way bigger than I have ever cut to use whole, lol.
