Our Thanksgiving Favorite
Sweet Potato Soufflé
3 C mashed sweet potatoes (3 large potatoes)
1/2 to 3/4 C sugar
1/4 C melted butter
2 eggs
1 t vanilla
Mix together and pour into buttered casserole dish (I use 9x9)
Topping
1 C brown sugar
1/3 C flour
1 C chopped pecans
1/4 C melted butter
Bake 350 for 30 minutes
