Default Quilt as You Go T-shirt Quilt

I'm getting ready to start a t-shirt quilt for a friends son. He has enough to make 2 good sized quilts. I was thinking of making it double sided. I have ideas rolling around my head and would like some feedback on what could go wrong before I get started. I want to do a little quilting on each block around the logos. My plan is to quilt the blocks without backing fabric, then put 2 blocks back to back (batting to batting). Probably sew a seem all the way around the edge, to keep them together. Then use the standard sashing method to attach the blocks together. I will use a light stabilizer on each shirt before I do anything. I don't have much QAYG experience so I will do lots of practice blocks first. Does that sound like it would work OK? Looking for all the advice I can get.
