I saw a couple quilts done using minky. They put together two pieces of minky, no quilting, then took about a 2" wide strip of minky and using the clips, and rounded corners, sewed binding on one side and then flipped over and sewed the other. It was raw edge. I think they used a fine zigzag. Since minky does not fray, it looked good and could not see stitching. If it bothers you, you could glue the binding on, matching edges on both sides and do a fancy stitch to attach.
